It’s fairly straight forward. Grate your cheese and add to a large mixing bowl. Mix to combine. Butter both sides of each bread slice with. I used truffle butter for some added flavor, but you can use regular salted butter if you wish.
Add a large skillet to medium heat. Not too hot or the bread will burn before the cheese melts. Toast all the bread on one side until perfectly golden. You can also do this in an oven grill as well.
Add cheese on the grilled side of 4slices, then place another half grilled slice on top with the non-grilled side facing up. Place back on the skillet and grill for 2 minutes on both sides or until the cheese is melted and the bread is golden. Slice and serve immediately.
Notes
StorageThese grilled cheeses are best served the day they’re made.CheeseI used three types of cheese in this recipe. The cheddar provides a sharp flavor, the mozzarella, that stringy stretchiness and the gruyere adds a sweet nuttiness. You can use any cheese blend you like, I would just suggest shredding or grating it yourself rather than buying it already grated.BreadAny type of bread will work for this recipe. You can go for a rustic style bread like a pane de casa, or a regular sandwich bread. Just make sure the bread is toast or thick slice.ButterThe butter needs to be good quality, it needs to be salted too. I used salted truffle butter from new Zealand which has a high fat percentage and is richer in flavor.
