Double Chocolate Fudge Cookies

Ingredients

Double Chocolate Fudge Cookies

  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1 cup (200 g) caster sugar
  • 1/2 cup (125 ml) melted butter
  • 2 tbsp vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup (150 g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (200 g) dark cooking chocolate (see notes)

Instructions
 

Double Chocolate Fudge Cookies

  • Preheat your oven to 175C / 350F. Line two baking trays with baking paper and set aside. Add the cocoa powder, white sugar, melted butter and vegetable oil into a large mixing bowl and use a whisk to mix until well combined. Then add the egg and mix until well combined.
  • Add the flour, baking powder, salt and half the chopped chocolate and use a spatula to mix until a dough forms.
  • Use a large ice cream scoop to scoop 12 cookie balls. Squish them in your hand and roll into a ball. Then squash them down between the palms of your hand. Place on the baking trays and bake for 10 minutes.
  • Once baked, add more chopped chocolate on top. Use a large round cookie cutter to shuffle around to get into rounder shapes. Allow to cool before serving.

Notes

Storage
You can store these delicious chocolate fudge cookies in an airtight container for up to three days.
Dark chocolate
It’s important to use cooking chocolate fort his recipe. Using non-cooking chocolate will cause the chocolate to seize and bubble as it bakes. Then it has a crumble texture.
