Add the peeled, cored and thinly sliced apples to a large mixing bowl, along with the brown sugar, lemon juice, cinnamon, vanilla extract and salt. Use a spatula or wooden spoon to mix and combine, taking care not to break the apples. Set aside.
Tart Shell
Add the flour, sugar, salt and cinnamon to a large mixing bowl and use a whisk to combine. Pour the melted butter in there. Mix using a spatula or spoon until a dough forms. Pour the mixture into a 9” tart tin with removable bottom. Use the back of a spoon to press firmly into the sides and bottom of the tin.
Arrange the apples in the tart shell. Sprinkle with caster sugar and cubed cold butter. Bake for 1 hour or until crust is golden.
Once cooled, brush with apple marmalade. Slice and serve.
