To make the ice-cream, add the cream, vanilla bean paste and sweetened condensed milk to a large mixing bowl. Use an electric hand mixer to whip to stiff peaks. Add the mixture to a loaf tin and freeze for 5 hours or overnight.
Take out for 14 minutes before using to thaw. To scoop, use an ice cream that’s been dipped in boiling water and dried. Then scoop.
Stewed Apples
Peel, core and dice the apples. Add to a saucepan on medium heat along with the brown sugar, butter, cinnamon and lemon juice. Use a wooden spoon to stir until apples soften slightly, about 2-3 minutes. Allow to cool.
To assemble, add some ice cream to your serving cups, followed by stewed apples, followed by caramel, more ice cream and then finish with more caramel. Serve immediately!
