Caramel Apple Sundae
This caramel apple sundae is everything you want in a fall dessert. Warm spices, perfectly stewed apples with a bite, and creamy homemade, no/churn vanilla bean ice cream. All topped with my homemade salted caramel sauce. Make it ahead of time, and have it ready as a weekend after-dinner treat!

I love how simple this dessert is! But itโs so delicious. All the flavors of apple pie but in an ice cream sundae with caramel! I also love how easy it is to make the ice cream. Make it ahead of time and freeze it overnight and just scoop it up when youโre ready to use it!
What does caramel apple sundae taste like?
The ice cream has flecks of vanilla beans in it, making it a delicious vanilla ice-cream that is creamy. The stewed apples are spiced with warm notes of cinnamon and the caramel sauce? Itโs bloody delicious! Salted and so tasty! If youโve never made caramel sauce from scratch, youโre really missing out!
What are the ingredients I need for the caramel apple sundae?
Heavy cream – this is the type of cream you use for whipping.
Sweetened condensed milk – this is the only thing that will sweeten the ice cream, whilst still keeping it smooth.
Vanilla bean paste – alternatively you can use a vanilla bean or vanilla extract.
Green apples – peeled and diced.
Brown sugar – light or dark is fine.
Unsalted butter – salted is also fine.
Cinnamon – I used powdered cinnamon which is a classic flavour combo with apples.
Lemons – youโll want to use fresh lemons in this recipe. It makes all the difference and the flavour is unmatched.

Letโs go through each step.
Ice-cream
- To make the ice-cream, add the cream, vanilla bean paste and sweetened condensed milk to a large mixing bowl. Use an electric hand mixer to whip to stiff peaks.
- Add the mixture to a loaf tin
- Smoothen out and freeze for 5 hours or overnight.
- Take out for 14 minutes before using to thaw. To scoop, use an ice cream thatโs been dipped in boiling water and dried. Then scoop.
Stewed Apples
- Peel,
- Core and
- Dice the apples.
- Add to a saucepan on medium heat along with the brown sugar, butter, cinnamon and lemon juice.
- Use a wooden spoon to stir until apples soften slightly.
- About 2-3 minutes. Allow to cool.
- To assemble, add some ice cream to your serving cups,
- Followed by caramel sauce,
- Stewed apples,
- Followed by caramel,
- More ice cream
- And then finish with more caramel. Serve immediately!
My Top Tips!
- Make the ice-cream a day ahead and up to 3 days ahead!
- You can also make the stewed apples up to a day ahead.
- The caramel sauce is easy and should be made at least 2 hours before serving the sundaes

Ingredients
Ice-Cream
- 4 cups / 1 litre heavy cream, cold
- 1 cup / 250 ml sweetened condensed milk
- 1 tsp vanilla bean paste
Stewed Apples
- 2 green apples, cored, peeled and diced
- 1 tbsp brown sugar
- 1 tbsp unsalted butter
- 1 tbsp cinnamon
- 1/2 lemon, freshly juiced
- 1 cup / 250 ml salted caramel sauce

Instructions
Ice-Cream
