Ingredients

Grilled Chicken

  • 2 large (600 g) chicken breasts skinless and boneless (see notes)
  • 1 tbsp Italian herb mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1 tsp brown sugar
  • 1 lemons or limes juiced.
  • 3 tbsp extra virgin olive oil
  • Chopped parsley to garnish

Instructions
 

Grilled Chicken

  • Add the chicken breasts to a large mixing bowl along with all of the marinade ingredients. Mix using your hands until combined and the chicken is coated. Cover the bowl with plastic wrap and place in the fridge to rest for 30 minutes.
  • Preheat a non-stick skillet to medium high heat. Drizzle with 1 tsp of olive oil and place the chicken on top. Cook for 6 minutes then use tongs to turn over. Cook for another 6 minutes or until the chicken reaches an internal temperature of 75C / 165F. Then squeeze the juice of 1/2 a lime or lemon on top and cover with a lid immediately. Cook for another 60 seconds. Transfer to a cutting board and let it rest for 3-4 minutes before using a large knife to slice up. Serve with a salad, pasta or in a sandwich.

Notes

Chicken - Opt in for using chicken breasts from a good quality butcher rather than pre-packed chicken from a supermarket that is pumped full of nasty chemicals to prolong its shelf life and is frozen and thawed before you buy it. A good quality butcher will sell fresh chicken.
Safe internal temperature - the safe internal temperature for chicken is 75C / 165F. If you want to make sure your chicken is cooked through use a
Storage
Fridge: Once cooked, Grilled Chicken can be stored in an airtight container for up to 2 days.
Freezer: Cooked Grilled Chicken can be frozen for up to 2 months. Thaw in the fridge before eating or in the microwave.
Marinade time: marinade your chicken for a minimum of 30 minutes to let the acidity in the lemon or lime to tenderize the chicken. Overnight will give you maximum flavor results!
Rest time: letting your chicken rest once cooked BEFORE slicing up will let the juices re-distribute themselves through the chicken resulting in a tastier and juicier chicken.

A note on measurements - all ingredients in this recipe are offered in Australian cup measurements and weight measurements. Weight measurements are created by me, in my kitchen here in Melbourne Australia. The best way to get recipe success is to measure ingredients by weight, using kitchen scales.
