Tim Tam Tart! This Chocolate Ganache tart is a no-bake chocolate delight! The star of the show is a famous little Australian cookie named Tim Tams. Tim Tams come in loads of different flavours so you can get really creative and let your imagination run wild if you wish.

My favourite thing…

My favourite thing about this tart is just how easy to make and delicious it is! I love Tim Tams and this tart puts them in the spotlight!

What are Tim Tams?

Tim Tams are an Australian biscuit. We call them biscuits here. Cookies that is… It’s covered in a thin layer of chocolate, a chocolate cookie, I mean biscuit and filled with chocolate cream. The beauty is, these come in loads of flavours. In this recipe I’ll be using Dark Chocolate Tim Tams and White Chocolate Mango Tim Tams.

What does this tart taste like?

Chocolate! This tart is perfect for Chocolate lovers. Can I make a confession? Years ago, when I made my first cookie recipe I read the ingredients and saw that it had salt in it. I was like, salt? UGH! YUK! But adding salt to desserts adds a really yummy depth of flavour. Like in savoury dishes, it elevates flavours in deserts too. Chocolate desserts are no exception. And the salt in the milk chocolate ganache makes this dessert so much tastier.

What you need for the tart

Crust

Tim Tams – I used dark chocolate Tim Tams for the crust.

 Unsalted butter – make sure your butter is cooled when it’s melted.

Milk Chocolate Ganache

Milk chocolate – I used cooking chocolate.

Heavy cream – This is the type of cream you use for whipping. It must have at least 30% fat content.

Unsalted butter – you can use salted butter but leave the salt out.

Vanilla extract – Use pure vanilla extract.

Salt – Any fine salt will work.

Dark Chocolate Ganache

Dark chocolate – I used dark cooking chocolate.

Heavy cream – Make sure this is the type of cream you use for whipping.

Unsalted butter – You can use salted butter if you wish.

Whipped Cream

Heavy cream – Use cream with at least 30% fat content.

Vanilla extract – Make sure you use pure vanilla extract. No imitation vanilla. It makes all the difference.

Decorations

Dark chocolate and mango tim tams – You can use any flavour you can find here!

How to make the Tim Tam Tart

Crust

1. Add the Tim Tams to the bowl of a food processor.

2. Blitz until you reach fine crumbs.

3. Add the butter and blitz to coat the crumbs.

4. Pour the mixture into a long-fluted tart tin.

5. Use the back of a spoon to press firmly into the sides. This mixture is quite dense already to this is an easy process.

6. Then add the remaining crumbs and press into the bottom. Chill the crust in the fridge.

Milk Chocolate Ganache

1. Add the milk chocolate, heavy cream, unsalted butter, vanilla extract and salt to a large heatproof bowl.

2. Microwave for 20 seconds at a time, stirring each time until smooth. Make sure there are no lumps.

3. Pour into the chilled tart tin. and spread around to make sure it’s flat.

4. Chill for 1 hour. it will set anough for the next layer.

Dark Chocolate Ganache

1. Add the dark chocolate, cream and butter to a heatproof bowl.

2. Microwave for 20 seconds at a time, stirring each time until smooth.

3. Pour on the chilled tart and spread evenly.

4. Chill for another hour.

Whipped Cream

1. Add the heavy cream and vanilla extract to a large mixing bowl. Use electric beater to whip to stiff peaks.

Let’s Decorate!

1. Add the whipped cream on top and spread around.

2. Then add the chopped Tim Tams! I used mango and dark chocolate ones that I sliced on angles. Slice and serve!

Tips for making the tart!

  • Make sure you leave enough time in between adding the milk ganache and dark chocolate ganache otherwise you won’t get that nice defined line of different chocolate layers.
  • Get creative and use different types of Tim Tams. there are so many different flavours.

Ingredients

Crust

  • 2 cups / 400 g Tim Tam cookies, dark chocolate
  • 2 tbsp / 30 g unsalted butter, melted

Milk Chocolate Ganache

  • 2 cups / 400 g milk chcoolate
  • 1 cup / 250 ml heavy cream
  • 1/4 cup / 50 g unsalted butter
  • 1 tsp vanilla exctact
  • 1/2 tsp salt

Dark Chocolate Ganache

  • 3/4 cup / 170 g dark chocolate
  • 1/4 cup / 60 ml heavy cream
  • 1/4 cup / 50 g unsalted butter

Whipped Cream

  • 1 cup / 250 ml heavy cream
  • 1 tsp vanilla exctract

Decorations

  • 1 cup / 200 g Tim Tam cookies, chopped

Instructions

Crust

  • Add the Tim Tams to the bowl of a food processor andblitz until you reach fine crumbs. Add the melted butter and blitz to coat the crumbs. It will look like wet soil.
  • Pour the mixture into a 11 x 35cm flited tart tin. Use the back of a spoon to press firmly into the sides and bottom. Place in thefridge to chill for 20 minutes.

Milk Chocolate Ganache

  • Add the milk chocolate, heavy cream, unsalted butter, vanilla extract and salt to a large heatproof bowl and microwave for 20 seconds at a time, stirring each time until smooth. Pour into the chilled tart tin and chill for 1 hour.

Dark Chocolate Ganache

  • Add the dark chocolate, cream and butter to a heatproof bowl and microwave for 20 seconds at a time, stirring each time until smooth. Pour on the chilled tart and spread evenly. Chill for another hour.

Whipped Cream

  • Add the heavy cream and vanilla extract to a large mixing bowl. Use electric beater to whip to stiff peaks.

Let’s Decorate!

  • Add the whipped cream on top. Then add the chopped Tim Tams. I used mango and dark chocolate ones that I sliced on angles with a sharp knife.

Notes

Storage
This no-bake tart can be stored in an airtight container for up to three days in the fridge. Simply thaw for 20 minutes before serving. Also nice when served chilled.
