I absolutely adore how delicious this dessert is. All of the layers come together easily and make for a really indulgent dessert. This is a really easy dessert that can be made ahead of time. Up to a day ahead of time!

Love Potion Chocolate Raspberry Parfait

What does it taste like?

Layers of silky smooth chocolate custard, cookies and cream whipped cream, spiked chocolate sauce, freshly made raspberry sauce and fresh raspberries. Itโ€™s delicious, easy to make and impressive.

Ingredients to make Chocolate And Raspberry Parfait Dessert For Two!

  • Caster Sugar – also known as superfine sugar.
  • Custard powder –  is a powder that is similar to corn starch but with colouring and vanilla flavoring. You can use corn starch in itโ€™s place.
  • Milk – I used cowโ€™s milk. You could use almond or oat milk.
  • Vanilla ExtractAlways use good quality vanilla extract when baking, it makes a huge difference. I have a great recipe here for it if youโ€™d like to try your own!
  • Butter – I used unsalted butter. Make sure itโ€™s cold and cubed to stop it from causing the custard to split.
  • Dark chocolate – I used nestle chocolate buttons.
  • Baileys – or whiskey.
  • Raspberries – use fresh raspberries if you can fine them otherwise use frozen ones.
  • Granulated sugar – you can use caster sugar in itโ€™s place.
  • Lemon juice – always use fresh if you can!
  • Heavy cream – this is the type of cream you use for whipping.
  • Mascarpone cheese – you can use cream cheese itโ€™s place.
  • Oreos – Chop them up finely.

My Top Tips!

Storage

Parfaits can be stored in an airtight container for up to three days and are even better the day after theyโ€™re made.

Butter

I know I added the butter all at once in the video, but I would recommend adding it in 3 lots and whisking each time until itโ€™s well combined to prevent it from splitting the custard.

Chocolate

I would recommend adding the chocolate while the custard is still warm to ensure it melts. If the mixture cools down too much, and the chocolate wonโ€™t melt into the mixture, simply microwave for 20 seconds and mix until melted.

Ingredients

Chocolate Custard

  • 1 cup / 210 g caster sugar
  • 1/4 cup / 20 g custard powder
  • 1 cups / 250 ml milk
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, cold and cubed
  • 3/4 cup / 150 g dark chocolate
  • 2 tbsp baileys or whiskey, optional

Raspberry Sauce

  • 1 cup / 120 g frozen or fresh raspberries
  • 1/2 cup / 105 g granulated sugar
  • 1/2 lemon juiced

Whipped Cream

  • 1 cup / 250 g heavy whipping cream
  • 1/2 cup / 120 g mascarpone cheese
  • 1 tsp vanilla extract
  • 1/2 cup / 50 g Oreos, chopped

Chocolate Sauce

  • 1/2 cup / 125 ml chocolate sauce
  • 2 tbsp baileys or whiskey, optional

Decorations

  • 1/2 cup / 50 g Oreos, chopped
  • 4 fresh raspberries to garnish


Instructions

Chocolate Custard

  • Add the sugar and custard powder to a medium sized bowl. Whisk to combine.
  • Add the milk and whisk until itโ€™s combined. Microwave for 30 seconds at a time, whisking each time until thickened. Add the vanilla extract and butter in three goes (see notes) and whisk until well combined.
  • Add the chocolate and mix until well combined.
  • Run the custard through a sieve to remove lumps. Cover with plastic wrap and chill for 2 hours. Once chilled uncover and whisk to freshen up until smooth.

Raspberry Sauce

  • Add the raspberries, sugar and lemon juice to a heatproof bowl and microwave for 4 minutes. Run through a metal sieve and discard the seeds. Allow to cool completely.

Whipped Cream

  • Add the heavy cream, mascarpone and vanilla extract and use an electric hand mixer to whip to stiff peaks. Add the chopped Oreos and fold through. Add to a piping bag.

Chocolate Sauce

  • Add the baileys to the chocolate sauce and mix to combine.

Assemble

  • Layer the dessert howโ€™ve you like. I added the chocolate custard and whipped cream to piping bags and the raspberry and chocolate sauce to squeeze bottles. Finish with whipped cream, fresh raspberries and chopped Oreos.
