No-Bake Mocha Ice-Box Cake
No-Bake Mocha Ice-Box Cake! It doesn’t get easier than this cake! This no-bake dessert is layered with chocolate chip cookies, spiked chocolate and coffee whipped cream and it’s topped with whipped cream and chopped cookies. No gelatin, no cream cheese. And that’s not even the best part! The magic with this cake is that after letting this rest, the cookies soak in the yummy cream and become cakey. A pure delight!

I love how absolutely easy this cake is to make. And yes, I do classify it as a cake. Once the cream and cookies have had time to set in the fridge they go cakey and delicious. I love that about this cake!
What does No-Bake Mocha Ice-Box Cake taste like?
So yum! I love the mocha cream, and weirdly, I love how everything in this cake has the same soft, light, and delicious texture but the chocolate chips provide a bit of bite!
What are the ingredients I need for the No-Bake Mocha Ice-Box Cake?
Heavy cream – make sure it’s the whipping kind. At least 30% fat content. And make sure it’s cold straight out of the fridge.
Mascarpone cheese – this is an Italian cream cheese.
Caster sugar – also know as superfine sugar.
Kahlua – this is optional. You can replace it with a coffee shot if you like.
Cocoa powder – make sure it’s unsweetened and make sure it’s good quality cocoa powder too!
Instant coffee powder – this helps give it that delicious mocha flavor!
Vanilla Extract – Always use good quality vanilla extract when baking, it makes a huge difference. I have a great recipe here for it if you’d like to try your own!
Chocolate Chip cookies – about 30 cookies. Any kind will do. Chewy or crispy.
Chocolate shavings – just regular chocolate shavings are fine.
Let’s go through each step.
Cake
- Add the heavy cream, mascarpone, caster sugar, Kahlua, cocoa powder, instant coffee powder and vanilla extract to a large mixing bowl. Use an electric hand mixer or stand mixer with whisk attachment to beat until you reach stiff peaks.
- Add a sheet of baking paper on the bottom of a 9-inch springform pan.
- Lay down a layer of chocolate chip cookies, cutting some cookies to fill in the gaps.
- Add 1/4 of the mocha cream mixture
- Spread around evenly using a spatula or spoon.
- Add the next layer of cookies and repeat the princess until you have 4 layers and finish with cream.
- Use a spatula to smoothen the top as smooth as you can. Place in the fridge to chill for 4 hours. Overnight is best.
Whipped Cream
- Add the cream and vanilla extract to a large mixing bowl. Use an electric hand mixer or stand mixer with whisk attachment to beat until you reach stiff peaks. Add the whipped cream to a piping bag fitted with an open star tip.
Let’s Decorate!
- Use a sharp knife to gently score around the side of the chilled and set cake to help separate it a little from the sides of the springform pan.
- Unclip the springform pan and transfer the cake to a serving plate.
- Pipe swirls of whipped cream on top.
- Sprinkle the centre with chocolate shavings. Slice to serve.
- Add chopped cookies.
My Top Tips!
- Use a sharp knife to run around the chilled and set cake to help loosen oit a little from the springform pan. Make sure you hold the knife straight.
- Ensure the cake is chilled really well before trying to take out of the springform pan.
- Keep the cake chilled all the way up to serving. Theres no real structure on the outside keeping it together other than it being chilled.

- 2 cups (500 ml) heavy cream
- 1 cup (340 g) mascarpone
- 1/2 cup (105 g) caster sugar
- 1/4 cup (60 ml) Kahlua (or a coffee shot)
- 2 tbsp cocoa powder
- 1 tsp instant coffee powder
- 1 tsp pure vanilla
- 30 (400 g) chocolate chip cookies
Whipped Cream
- 1 cup (250 ml) heavy cream, cold
- 1 tsp vanilla extract
Decorations
- 4 chocolate chip cookies
- 1/2 cup (100 g) chocolate shavings
