This delicious Pico De Galo recipe is a delicious tangy chopped veggie salsa that can be served on it’s own with corn chips as a snack, or with tacos! It made of simple ingredients you probably already have!

What I love about this Pico De Galo Recipe!

What I love about this Pico De Galo is that it’s made of fresh, simple ingredients. And for something with so few ingredients, it packs a powerful flavour punch!

  • Sweet tomatoes
  • Onions that add a bite
  • Tangy lime juice
  • Salt, pepper and coriander!

Here are the ingredients you’ll need for Pico De Galo

Onion – I used brown onion, but I’ve made this with red as well because I love the sweetness it adds!

Tomatoes – Removing the seeds using a spoon is optional but helps reduce the amount of liquid in the pico de galo resulting in a delicious salsa. I used truss tomatoes, but it’s up to you which ones you use. The sweet variety is best. Just make sure you end up with about 1 cup of cubed tomatoes.

Coriander – optional. You can leave it out if you don’t like coriander. Use parsley instead!

Lime – freshly squeezed is always best!

Salt – I used sea salt flakes. I like using these in fresh dishes. I find sine salt works best in cooking recipes.

Chilli – I’m not a fan of spicy food so I left this out but you can totally use this if you love a heat kick!

Corn chips to serve – This is a great recipe if you after something yummy to much on while binging your fave tv show. Serve with salty corn chips. It’s also great in a Greek gyro, or in tacos!

Pico De Galo can be stored in an airtight container and chilled for up to three days.

Tomatoes
