My favourite thing about this cookies & cream cheesecake trifle is what happens to it the day after itโ€™s made. When you combine cream and cookies together and let them get to know each other for a day, the cookies become soft and cakey and it just makes it such a delicious experience!

I love the addition of brownies in this recipe too. It adds an extra dose of chocolate which makes this a fun and indulgent dessert!

What does it taste like?

So many good flavours! Let me break it down!

Brownies – so chocolatey and so indulgent. The cookies in this recipe are fudgy, and add a delicious texture to this trifle.

Chocolate Ganache – this is going to add some sweetness to the dessert. Believe it or not, the dessert is not overly sweet.

Cookies & Cream Cheesecake – the cheesecake is so delicious and tangy in this recipe and helps break through the sweetness of the chocolate.

Whipped Cream – In my opinion, the star of the show! I love what the cream does to the cookies in this recipe and I love the texture it gives it too. Soft and creamy. Yum!

What are the ingredients I need?

All-purpose flour – also known as plain flour.

Unsweetened Cocoa Powder – I would recommend only using unsweetened cocoa powder.

Granulated Sugar – You can use this or caster sugar. Either is fine.

Unsalted butter – you can use salted if you wish.

Dark Chocolate – I used Nestle Chocolate melts.

Eggs – I used large eggs.

Oreos – You can use any type of chocolate cookie you like. It doesnโ€™t have to be Oreos.

Heavy Cream – This is the type of cream you use for whipping.

Cream Cheese – Use block cream cheese. Not the spreadable kind. I used Philadelphia cream cheese.

Powdered Sugar – Also known as icing sugar.

Vanilla Extract – Use a really good quality vanilla extract. A little goes a long way!

My Top Tips!

  • When whipping the cream, whip to stiff peaks but donโ€™t whip beyond that or youโ€™ll end up with butter!
  • This recipe really relies on good quality ingredients to be really superb! So donโ€™
  • T skimp on good butter, vanilla extract and cocoa powder.

ThisCookies & Cream Cheesecake Trifle is so easy to make. And the beauty is that you can make it ahead of time and itโ€™s even better the next day! The cookies go all cakey and soft. So good!

Ingredients

Brownies

  • 1/2 cup / 75 g all-purpose flour
  • 3/4 cup / 75 g unsweetened cocoa powder
  • 1 1/2 cups / 300 g granulated sugar
  • 1 1/4 cups / 300 g unsalted butter
  • 2 cups / 300 g dark chocolate
  • 6 large eggs
  • 3 cup / 600 g oreos, divided

Chocolate Ganache

  • 2 cups / 300 g dark chocolate
  • 1/2 cup / 125 ml whipping cream

Cookies And Cream Cheesecake

  • 2 blocks / 500 g cream cheese
  • 1/2 cup / 60 g powdered sugar
  • 1 tsp vanilla extract
  • 12 cup / 125 ml heavy cream
  • 1/2 cup / 100 g Oreos, crushed

Instructions

Chocolate Ganache

  • Add chocolate and cream into a large microwave safe bowl. Microwave for 20 seconds at a time, mixing each time until smooth. Cover with plastic wrap and set aside to set. Alternatively, you may melt it using a double boiler. Fill a medium sized pot with 1/3 of the way with water. Bring to a boil. Place bowl with chocolate and cream over the top and gently mix until mixture is completely melted and smooth. To soften the ganache to spreading or piping consistency microwave for 10 seconds at a time, mixing each time with a large spatula until it reaches the right consistency. Allow to set at room temp.

Brownies

  • Preheat a fan forced oven to 175C (340F). Spray an 8by 8 inch square pan with non stick cooking spray and lay the bottom with parchment paper. Set aside.
  • Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
  • Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined.
  • Slowly add chocolate and butter mixture while mixing on low speed.ย 
  • Add batter to baking tin lined with baking paper. Bake for 30 min or until a pick comes out with moist crumbs. Allow to cool down completely before using a large knife to cut up into 4×4 rows. Youโ€™ll end up with 16 brownie cubes.

Cookies And Cream Cheesecake

  • Add the cream cheese, powdered sugar and vanilla extract to a large mixing bowl. Use an electric hand mixer to whip until creamy and smooth. Add the cream and oreos. Mix until well combined.

Whipped Cream

  • Add the whipping cream and vanilla extract into a large mixing bowl. Use an electric mixer to whip to stiff peaks.

Assembly

  • Begin by adding half the brownies into a serving bowl or trifle bowl. Top with half the cheesecake mixture. Use a spatula or spoon to spread around evenly. Top with some chopped Oreos. Then with half the chocolate ganache. Add a third of the whipped cream and spread around with a spoon. Add more chopped Oreos followed by the rest of the brownies. Add the remaining cheesecake mixture and spread around. Top with chopped Oreos, followed by the second third of the cream. Top with more chopped Oreos and then pipe some swirls of whipped cream on top using an open star tip. Top with Oreo halves and rainbow sprinkles.

Notes

The trifle is best eaten the day after itโ€™s made. To serve the trifle use a sharp knife to cut wedges. Use a cake server to scoop it out piece by piece.
