We love these oven baked Crispy Broccoli Fritters in our house. Adults and fussy toddlers! Theyโ€™re cheesy and the perfect way to serve up veggies to the family. Plus, I love how easy they are to make! Theyโ€™re packed full of deliciously sweet and tender broccoli which goes nicely with the cheesy crispy exterior!

If Iโ€™m listing other things I love about them, I love how easy they are to make, theyโ€™re vegetarian (great way to start the week), ready in 30 minutes and ultra-crispy. Plus! They pair perfectly with your favorite sauce! Personally, I love them with my tzatziki, but they go nicely with a creamy mayonnaise too!

How To Steam Broccoli - broccoli ingredient

For this recipe, youโ€™ll need to cook your broccoli. It only takes 6 minutes! I have a full tutorial on how to do this on the blog, here. Alternatively, you can boil the broccoli, although for the sake of keeping these fritters crispy, Iโ€™d recommend steaming it.

I do want to run through some of the amazing things about broccoli though!

  • Broccoli has loads of flavor! Itโ€™s sweet and adds so much texture to these fritters!
  • Itโ€™s nutrient packed! Broccoli is so healthy for you. Itโ€™s loaded with vitamin C, K1, potassium, magnesium, and iron.
  • Itโ€™s low in calories! Making it perfect for people who are trying to keep healthy!

Ingredients You Need To Make Crispy Broccoli Fritters

  • Broccoli – to prepare your broccoli, cut your broccoli up into florets and then wash before you steam or boil.
  • Eggs – I used large eggs
  • Garlic powder – I like the flavor better than fresh garlic for this recipe. Itโ€™s also not as strong.
  • Onion powder – I use onion powder for the flavor, also much quicker than chopping up onion and sautรฉing it.
  • Italian herb mix – or oregano.
  • Salt – I used fine salt.
  • Black pepper – freshly ground is best, although white pepper powder works too. You only need a small pinch.
  • Panko breadcrumbs – are a crispier, Asian breadcrumb, but you can use fine breadcrumbs instead.
  • Cheddar cheese – cheese like tasty cheese or Colby cheese will work. I would recommend grating it yourself instead of buying it grated because itโ€™s got a better flavor.
  • Green onion – also known as spring onion. Finely chop this.
  • Dill – optional, but I like the flavor this gives the fritters.

How to make Crispy Broccoli Fritters!

  1. Cut your broccoli into florets, wash and steam for 6 minutes or boil for 8 minutes. Once cooked, allow to cool for 5 minutes and then cut into course pieces.
  2. Add to a large mixing bowl with the rest of the ingredients.
  3. Mix until well combined.
  4. Scoop out onto on a baking tray.
  5.  
  6. Bake until golden, turning at the 18-minute mark.

My favorite way to serve these is with a yogurt sauce, tzatziki, chipotle mayo but they go well with a tomato sauce or a mayonnaise too!

Tips and Tricks For Recipe Success!

  • Donโ€™t worry if the mixture looks dry, the cheese melts and the eggs helps bind everything together once its baked.
  • Donโ€™t overcook your broccoli! 6 minutes is all it takes!
  • Cheddar cheese, also known as tasty cheese, is the best cheese to use in this recipe. Soft cheeses wonโ€™t help keep things together and crispy up like cheddar or cheeses similar to it do.
  • To make the mixture a little easier to handle, chill it in the fridge for 20 minutes before shaping and baking.
  • To make these Gluten Free, simply use gluten free breadcrumbs.

What does they taste like?

Theyโ€™re cheesy, crispy and slightly sweet from the tender broccoli. Overall, a tasty meal you can eat with your hands and pair with your favorite dipping sauce!

How do I store these?

You can make these ahead and store in the fridge for up to 4-5 days or freeze them for 3-4 months! Reheat in the microwave or for a crispy fritter, in the oven.

Can I pan fry these?

Yes! These can be pan fried with a little olive oil. Theyโ€™re even crispier! Cook on medium heat until golden on each side. About 5 minutes on each side.

Could I use other veggies?

Yes! Add some grated carrot, sweet potato and some grated zucchini!

Ingredients

Oven Baked broccoli Fritters

  • 6 cups / 400 g broccoli, cut into even sized pieces
  • 3 eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian herb mix
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup / 60 g panko breadcrumbs
  • 2 cups / 200 g cheddar cheese, shredded
  • 2 sprigs green onion, finely chopped
  • 1/4 cup / 30 g dill, chopped


Instructions

Oven Baked broccoli Fritters

  • Cut your broccoli into florets, wash it and boil or steam your broccoli until tender. Steam for 6 minutes or boil for 8 minutes. Drain well and allow to cool. Once cooled, chop up coarsely.
  • Preheat a fan-forced oven to 180C /350F. Line two baking trays with baking paper. Set aside.
  • Add to a large mixing bowl with the remaining ingredients. The mixture will seem dry but will come together in the oven.
  • Roll into balls or disc shapes and place on a baking tray. Bake in the oven for 15 minutes, then flip and bake for a further 15 minutes or until golden and crispy. Serve with some lemon or yogurt o dip in.

Notes

Storage – Fritters can be frozen for up to 2 months or can be stored in an airtight container and kept in the fridge for up to three days.
Nutrition – is based on per fritter. This recipe makes 20 fritters and serves 4 with a salad or 10 as an appetizer.
A note on measurements – all ingredients in this recipe are offered in Australian cup measurements and weight measurements. Weight measurements are created by me, in my kitchen here in Melbourne Australia. The best way to get recipe success is to measure ingredients by weight, using kitchen scales.
