These delicious marshmallow brownie bars are so much fun to make! Have you ever made homemade marshmallows? They’re so much better than store-bought ones! Couple them with my fudgy brownie recipe and you have something pretty spesh!

I love how cute these are! The brownie layer at the bottom is dense and decadent and the marshmallow layer on top is lighter than air! And have you ever tried homemade marshmallows before? They’re totaly different from store-bought! More on that below.

What do marshmallow brownie bars taste like?

Homemade marshmallows are light. They’re not chewy like store-bought ones. Sure you can make them chewy using a different recipe, but this recipe is simply divine! The brownie layer at the bottom is so rich and chocolatey which is perfectly complemented by the marshmallow layer. And those sprinkles on top? Just cute!

What are the ingredients I need for marshmallow brownie bars ?

Dark chocolate – I used Nestle baking buttons.

Unsalted butter – Make sure your butter is cooled slightly after it’s melted.

Caster sugar – also known as superfine sugar.

Egg – I used a large egg.

Vanilla ExtractAlways use good quality vanilla extract when baking, it makes a huge difference. I have a great recipe here for it if you’d like to try your own!

All-purpose flour – also known as plain flour.

Cocoa powder – I used unsweetened cocoa powder.

Salt – I used fine salt.

Dark chocolate chips – I used the nestle brand. Btw, any chocolate will do. White, dark or milk, you pick!

Gelatin – I used powdered gelatin.

Strawberry flavoring – I used the Roberts brand flavoring.

Pink Food gel – I used chefmaster.

My Top Tips!

  • Make sure you let the brownies cool completely before adding the marshmallow layer on top. Der fred? Amirite?
  • When making the marshmallow layer, work quickly. Once that mixture is whipped, it will set quickly. Especial if it’s a cold day.

Ingredients

Brownies

  • 1/3 cup (65 g) dark chocolate, melted
  • 1/2 cup (85 g) unsalted butter, melted
  • 1/2 cup (125 g) caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup (50 g) all-purpose flour
  • 1/4 cup (30 g) cocoa powder
  • 1 tsp salt

Easy Marshmallow Layer

  • 1 1/2 cups (200 g) caster sugar
  • 3/4 cup (190 ml) boiling water
  • 2 tbsp powdered gelatin
  • 3/4 cup (190 ml) cold water
  • 1 tsp vanilla extract
  • 1 tsp strawberry flavoring
  • 4 drops pink food gel

Instructions

Brownies

  • Preheat the oven to 180°C / 350°F. Line an 8-inch square baking dish with parchment paper.
  • Add the butter and sugar into a large mixing bowl. Use electric beaters to whisk until well combined. Add the egg and whisk until well combined, pale in colour and fluffy. Add the melted chocolate and whisk until well combined.
  • Sift in the flour, cocoa powder, salt and chocolate chips.Use a spatula to mix until well combined.
  • Add the batter to the tin. Bake for 20 minutes. Allow to cool completely.

Easy Marshmallow Layer

  • Add the cold water and gelatin into a small mixing bowl and mix using a fork until well combined. Set aside to rest.
  • Next, add the boiling water and sugar into a saucepan. Use a whisk to mix for 3 minutes until the sugar is dissolved.
  • Add the gelatin and whisk gently until the gelatin is dissolved.
  • Set the mixture aside to cool to room temperature for about30 minutes.
  • Add the cooled mixture to the bowl of a stand mixer and fit it with the whisk tool. Whisk on high speed for 10-12 minutes until the mixture triples in volume and resembles a thick glossy meringue. Add the vanilla extract, strawberry flavouring and pink food gel at about the 5-minute mark.
  • Add the marshmallow mixture on top of the cookie dough and spread using a small spatula. Sprinkle with sprinkles. Place in the fridge to set overnight.
  • Slice up using a large knife brushed with oil. Serve.

Can I use White chocolate instead of Dark in the brownie? and replace the cocoa with equal weight flour?
